Omega Yeast is a great local yeast company a few blocks from our shop. The yeast is in high demand and not always in stock. We get the yeast fresh from them every few days based on demand. Please place an order and if we don't have it in stock we can usually get it and ship the next day for orders placed before 4pm CST. If it will take longer than a day we will let you know. Saisonsteins Monster is an Omega-original, genetic hybrid of two saison strains: the French OLY-026 and Belgian OLY-027. It is versatile, aromatic and attenuative with a silky mouthfeel. It excels in high gravity and ferments reliably and thoroughly. It is spicy, complex, tart, dry and crisp with some bubblegum character present from its Belgium parent, and more fruit and fewer phenolics than its french parent. Attenuation is 80-90% or more. 100 mL pack good for 5 gallons of wort with water, yeast, barley, malt extract, hops as the only ingredients. Each pack now contains 150 mL of yeast slurry to enhance the brewer's experience!
