Omega Yeast is a great local yeast company a few blocks from our shop. The yeast is in high demand and not always in stock. We get the yeast fresh from them every few days based on demand. Please place an order and if we don't have it in stock we can usually get it and ship the next day for orders placed before 4pm CST. If it will take longer than a day we will let you know. Ripe banana esters (with a hint of pear) make this new, Omega Yeast original a standout for pastry stouts, milkshake IPAs and other modern ales. For prime banana esters, pitch at 68°F (20°C) and let free rise to 72-75°F (22-24°C). Unlike its parental Hefeweizen strain, Bananza is versatile because it is non-phenolic and therefore incapable of producing clove flavors that would mask its pure banana profile. Omega Yeast's metabolically healthy cells produce vigorous fermentation and consistent results for home brewers and probrewers alike. Each pack now contains 150 mL of yeast slurry to enhance the brewer's experience!
